Croqueta Recipe

Some people make their croqueta or croquette (as commonly known by others) that consists of ham and cheese inside.

This recipe I will be sharing has been a recipe from my grandmother. Ever since I was a kid, this has been one of my favorite food.

Ingredients:
300lbs Lean Ground Beef
1 minced Garlic
1 minced Onions
2 packs of Raisins (depending on your choice)
7 large Potatoes
A dash of ground pepper
1 sachet of Magic Sarap
Fine bread crumbs
* cheese (mozzarella, Eden cheese or any cheese of your preference) [optional]
1 can of Evaporated Milk
Butter
A pinch of salt
A dash of pepper
Knorr Liquid Seasoning
2 eggs
Instructions:
Heat cooking oil in the pan.
Saute garlic until light brown. Add onions.
Put in the ground beef, pepper and magic sarap then mix.
After 10- 15 mins., put the raisins then saute. Let it stay for another 10 mins. in a low fire then set aside.
Preparing the Mashed Potato:
Wash and scrub the potatoes very well on a running water.
To easily remove the skin, make a thin cut on the outer layer of potato. Do it crosswise.

Place it in a pot with water and let it boil.
Once it’s boiling, lower the fire a bit and let it simmer for 15- 20 mins.
Poke the potatoes using a fork to check if it’s already soft enough. If yes, then you can turn off the stove. (P.S. Don’t boil it too long or else you will have a hard time on forming the croqueta.)
Drain the water and let the potatoes cool down for about 15 mins.
Remove the skin of the potatoes using your bare hands through running water.
After removing the skin, place the potatoes in a big bowl and mash it using a masher or a fork.
While mashing the potatoes, pour the milk, salt, pepper, butter and a bit of Knorr Liquid Seasoning and mix well. (P.S. Taste it using a separate spoon until you reach the desired flavor of your mashed potato.)
Add the cooked ground beef and mix it together.
Cut small cube slices of cheese.
In a separate bowl, beat the egg.
Pour breadcrumbs on a plate.
Put some cooking oil on your hands (make sure your hands are clean) and a handful of mashed potato with the meat with it. Place the cut cheese inside and shape it into a small ball. Make as many as you can.
Dip it in a beaten eggs then roll it in the breadcrumbs.
In a skillet, pour a little cooking oil once it is warm. (P.S. better if a non-stick pan)
Place the a ball or two in the frying pan. Best to flatten it a little bit. Cook it around 5 mins. per side.
After cooking, place the croqueta on a plate with paper towels so it can absorb the excess oil.
Serve while it’s hot.
