Spanish-Filipino Chicken Afritada Recipe

Recently, I made my own Chicken Afritada for my family. This recipe of mine had a kick of Spanish-Filipino taste, which included Spanish ingredients like chorizo and chickpeas in exchange for green peas. Luckily, even my son, Lucas loved it! 🙂

I slow cooked the chicken to bring out more of the flavor and to make it more tender. It’s definitely worth the wait!

 Ingredients:

  1. 500lbs Chicken thighs

  2. 1 minced garlic

  3. 1 minced onion

  4. 4 medium size potatoes

  5. 2 carrots

  6. 1 chorizo

  7. 1/2 can of 425g chick peas (Garbanzos)

  8. 1 medium size bell pepper (optional)

  9. 1 chicken broth

  10. 300ml tomato sauce

  11. 1 canned of 400g whole peeled tomatoes

  12. 200ml  distilled water

  13. 1 pack of Maggi Magic Sarap

  14. A dash of ground black pepper

Instructions:

  1. Heat cooking oil in the pan.

  2. Saute garlic until light brown. Add onions.

  3. Add the chicken thighs. Saute then put magic sarap and pepper to add more taste. Cover and cook in a very low fire.

  4. After 10 mins., pour the chicken broth. Flip the chicken to cook the other side.

  5. Simmer the chicken around 30 mins. in a low fire until it turns light brown.

  6. Put the potatoes and carrots in the pan.

  1. Slice chorizos thinly. In a seperate pan, heat olive oil.

  2. Saute the chorizos until it gets a bit crispy. (I like it crispy! It brings out the flavor more.)

  3. Pour around 200ml of water into the chicken pan and let it boil for around 10- 15 mins.

  4. Put the chick peas (garbanzos).

  5. Pour the canned tomatoes and mash it. Add the tomato sauce then, mix everything.

  6. Put the cooked chorizos with the olive oil and let everything boil for another 10- 15 mins. in a very low fire.

  7. Transfer to a serving bowl. Serve.

  8. Share and enjoy with your family!
