I've been wanting to eat baked potato! Remembering the days eating baked potato with my dad at Wendy's...
I thought of making one. My own very special homemade. And it was a blockbuster! Everyone loved it.
In this blog, I will be sharing my homemade experiment recipe.
P.S. This requires really hard work and a lot of time! And I didn't measure any of this! I measured it using my preferred taste.
What you will be needing:
1. Potatoes
2. Butter (LOTS & LOTS!)
3. Milk (preferably evap milk)
4. Salt
5. Pepper
6. Cheese (melted cheese for nachos &/ eden cheese)
7. Sour cream (MUST! but can be optional)
8. Bacon (MUST! MUST!)
9. Fresh Chives (optional)
10. Green Onions (optional)
11. Parsley (optional; but this is what I used-- dried parsley; preferably fresh)
Directions:
Preheat the oven to 400c.
Prick the potatoes all over using a fork. (make sure to scrub and wash it properly to remove the dirt!)
Spread cooking oil all over the potatoes.
Put the potatoes on a baking pan and cover the pan with a foil.
Place it in the oven for about 1 hr.
After 1 hour, let it cool down. Once cool down, cut the potatoes lengthwise.
Carefully scoop the potato out flesh from center of each potato into a bowl. (make sure not to destroy the skin of the potato!)
Add butter (lots of it!)
While mashing the potato, pour the milk. (easier if you have a masher)
Season it with salt and butter. Set aside.
Cut the bacon into small pieces and fry it in the pan. (You can also not cut it, fry it as is then later crushed it into your potatoes)
Put the mashed potato back on the skin.
Put Eden cheese on top of the masked potato. (we didn't have melted cheese at that time)
Put it back in the oven and baked it for another 15 mins or until the cheese melts.
Pour sour cream and melted cheese on top.
Add the crushed bacon.
(Optional) You can either add some fresh chives, green onions or fresh/ dried parsley if you have)
P.S. You can store it in the ref and heat it in the oven anytime.
